Every loaf of Real Bread begins with raw, organic wheat berries, transported by train, from states including Montana, the Dakotas & Georgia. These organic, wheat berries are freshly milled in-house, in small batches to retain the bran, germ, and endosperm, with them the essential oils and nutrients that industrial processing strips away.

 

By rejecting the processing, chemicals and synthetic preservatives used to strip the grain (to retain a long shelf life), we return bread to its honest form: a living source of healthy nourishment and authentic flavor.

The Scoop:

All-purpose flour is not just “okay” or “convenient,” — it’s a stripped-down, deceptive product that our bodies weren’t meant to live on, and it’s quietly robbing us of real nourishment.​  All-purpose flour (that dust in the bags found at every grocery store) is basically just the starchy middle part of the wheat kernel. In the late 1800s, big steel roller mills started stripping away the bran (the outer layers) and the germ (the nutrient-packed “heart” of the seed) so the flour wouldn’t go rancid and could sit on shelves for years.

 

“When you strip the grain, you strip the life.”

 

What’s left is mostly starch and a bit of protein—a “dead” flour that’s virtually devoid of the vitamins, minerals, fiber, enzymes, and phytonutrients God designed into the whole grain.

Here’s what it lacks (and why it matters):

  • The bran gives us most of the fiber, B vitamins (like niacin, B6), and minerals. Without it, we lose up to 80% of the original nutrients—fiber drops to just 7% of what it should be.

 

  • The germ holds vitamin E, essential fatty acids (like linoleic acid), more B vitamins, antioxidants, and the “life force” that helps our bodies actually use the food. Bleaching destroys what little vitamin E remains.

 

  • Overall, 25–30 nutrients get drastically reduced or completely removed—things like magnesium (85% gone), zinc, manganese, potassium, and so much more. Even the protein quality drops because lysine (an essential amino acid) is lost.

 

They call it “enriched” and add back just a handful of synthetic nutrients (usually iron plus three B vitamins, sometimes folic acid).

The term ‘enrich’ is quite deceptive… Nothing could be further from the truth. It’s not restored—it’s still missing fiber, healthy fats, and 18+ other vitamins and minerals that whole wheat naturally provides. Our bodies know the difference; that’s why we get cravings, stay hungry, and struggle with digestion.

Trends can be discovered that the big rise in modern health problems—constipation, diverticular disease, heart issues, obesity, diabetes, even historical epidemics like beriberi and pellagra—can be traced right back to when white flour took over in the 1920s. The all-purpose flour in America is convenient for companies who profit by selling the bran and germ as animal feed, but it leaves people undernourished and sick.

 

Anecdotal testimonies claim that switching to freshly milled whole-grain flour that we use in our Real Bread, clears up fatigue, congestion, sugar cravings, warts, and more—almost overnight. We even hear claims that the need of antihistamines vanish!

This is all about knowledge and the wisdom to use this knowledge responsibly. God made wheat as one of the most nutrient-dense foods on earth (40 of the 44 essential nutrients right there in the whole kernel). All-purpose flour trades that for shelf life and fluffiness, and our bodies pay the price.

But what about
whole wheat bread?

Commercially milled “whole wheat” flour starts out exactly like white flour. Massive steel roller mills crush the wheat kernel and separate the endosperm (the starchy white part) from the bran and germ. The bran and germ—making up about 28% of the kernel and holding most of the fiber, vitamins, minerals, healthy oils, enzymes, and “life force”—get totally pulled out. Then, to make “whole wheat,” they simply grind up some of the bran and add it back into the white flour. But here’s the kicker: “The wheat germ and oil is left out, as it would cause the flour to go rancid quickly.” No legal standards require them to put the full germ back in. “Whole Wheat Flour is produced commercially by recombining ground bran with the white flour. The wheat germ and oil is left out… No legal specifications are required for this labeling. Most people think ‘whole wheat’ means ‘whole grain.’” It doesn’t. It’s partial at best.

Even when a product is labeled “whole grain” (which has stricter rules for fiber ratios), it’s still not the complete kernel. They can extract gluten from the white flour and add extra back in, messing up the natural balance. And remember—this all happens months before it hits the shelf. Once the grain is milled and the protective layers are broken, oxidation kicks in fast: up to 45% of nutrients can be lost in the first day alone, and 90% in just three days. The precious vitamin E, essential fatty acids, and enzymes in the germ? Gone or destroyed. Store-bought “whole wheat” a far cry from the real thing: Commercially milled whole wheat flour is not at all the same as what is produced here as we milled the flour ourselves, retaining all the natural ratios of the wheat grain.

The bran and germ are where the real nourishment lives—the fiber that slows sugar absorption, the B vitamins, minerals, antioxidants, and that natural “life” that helps our bodies actually use the food. When they strip and partially rebuild it for shelf life, we lose the full package. That’s why some people react poorly to store “whole wheat” bread or flour but thrive on fresh-milled. The commercial version can still spike blood sugar more like white bread because it’s missing the complete fiber and oils that God put there to balance it. People have seen it over and over in families: fatigue, digestion issues, and cravings clear up when they switch to truly complete, freshly milled, Complete Wheat grain. There’s no such thing as healthy whole grain processed bread products in the regular grocery store. The only way to get the complete wheat grain—with every part of the kernel (bran, germ, and endosperm) in its natural, living state—is to mill it yourself right before you bake, just as we do. It’s fresher, softer, more flavorful, and actually feeds your body the way God intended. We’ve seen the difference in our own kitchen—lighter bread, better energy, no more “heavy” feeling after eating.

Gluten! The Boogeyman!

Gluten is not the enemy. It never has been.

Gluten is simply the beautiful, stretchy, elastic network that forms naturally, giving bread the structure to help bread rise!

 

It’s not some toxic chemical or modern invention hiding inside the grain. It’s a culinary term for something that has been part of bread for thousands of years. Wheat itself is one of the most magnificent grains our Creator ever made—forty of the forty-four essential nutrients right there in one little berry! So no, gluten is not out to get you.

 

The real enemy—the thing that has caused all the pain, the sensitivities, the fear, and the health problems—is what modern industry has done to the flour. That’s it. Plain and simple.

 

Since the early 1900s, the stripping away the bran and the germ—the fiber, the enzymes, the B vitamins, the vitamin E, the natural oils, and all the living vitality that helps your body digest that gluten the way it was designed to has been taken away and robbed from us!

 

What’s left? Just isolated gluten and starch. Then, to make up for the fact that this dead, nutrient-poor flour won’t rise or hold together properly, commercial bakers dump in extra vital wheat gluten—sometimes listing it as one of the first ingredients!

 

It's bleached, preservatives are added to increase shelf life, they do everything possible to make that poor, stripped flour behave like real bread.

 

But it’s not real bread. It’s a processed impostor. That’s the enemy!: the commercial flour and the so-called “bread” on store shelves.

 

It’s been robbed of God’s goodness, robbed of the complete package that was meant to nourish us. And when the body is handed this incomplete, over-processed protein without the enzymes and fiber to break it down properly—especially when our guts have already been damaged by antibiotics, processed foods, and low-fiber diets—no wonder so many people react!

 

It’s not the wheat. It’s not the gluten. It’s what we’ve done to the flour.

 

The anti-gluten propaganda, the fear-mongering headlines, the “gluten-free” aisle that’s full of even more processed junk—they’ve all pointed the finger at the wrong thing. They’ve demonized something God created as good, while the real culprit—the industrial processing that turned the Real Bread of Life into “gluten and starch”—gets a free pass.

 

But here’s the beautiful part: We mill those whole wheat berries fresh and bake the complete grain—bran, germ, and endosperm all together, exactly the way they grew—the gluten forms naturally, right there in the presence of every single nutrient, enzyme, and fiber the Lord packed into that seed.
